The olives, harvested by hand during the month of December when they have reached the right level of ripeness, grow in olive groves which cover the rolling hills of Todi and the slopes of the Martani Mountains, areas where love for the land and history come together through a combination of authenticity and tradition.
Cold extraction brings out the decisive tones of white almond and artichoke heart, the floral notes and hints of balsam make it rich and complex on the palate, with an extraordinary balance between hints of sharpness and spice.
